Mushroom and ham lasagna à la Gabi

Ingredients for 4 servings:

  • 1 medium-sized onion(s), diced
  • 250 g fresh mushrooms, sliced
  • 2 tbsp oil
  • 1 can of tomatoes (800 g), drained, finely chopped
  • 3 tbsp flat-leaf parsley, chopped
  • 4 tbsp dry white wine
  • Salt
  • Black pepper, freshly ground
  • 1 pinch(s) of sugar
  • some butter, for greasing
  • 250 g lasagna sheet(s), without pre-cooking
  • 300 g ham, cooked, cut into strips
  • 250 g buffalo mozzarella, cut into strips
  • 2 eggs, hard-boiled, sliced

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 5 minutes

Heat the oil in a large pan and sauté the diced onion and sliced ​​mushrooms. Stir in the tomatoes, parsley, and white wine. Season with salt, pepper, and sugar. Cover and simmer over low heat for about 45 minutes. Place the lasagna sheets in a greased baking dish, pour over 1/3 of the sauce, add a layer of ham and 1/3 of the mozzarella, and top with half of the egg slices. Continue layering with the remaining ingredients and bake in a preheated oven at 200°C for about 35-40 minutes.
