Grease a large baking dish. Preheat the oven to 200°C (fan/convection oven). Wash the schnitzels, pat dry, and halve them depending on their size. Season with salt and pepper. Place them side by side in the baking dish. Season the minced meat with salt, pepper, and 1 tablespoon of Italian herbs, then knead with the eggs. Spread the mixture over the schnitzels. Clean and slice the mushrooms, then place them on top of the minced meat. Mix together the cream, milk, and tomato paste. Season with salt, pepper, crushed garlic clove, and oregano. Pour the sauce over the schnitzels, making sure the schnitzels are not completely covered. Place the baking dish on a rack in the center of the oven. Bake for 25 minutes. Remove the dish from the oven, top with cheese slices, and bake at the same temperature for 5-8 minutes, until the cheese is melted. Serve with gnocchi, rice, and/or baguette.
