Ingredients for 4 servings:
- 4 turkey schnitzels
- 200g mozzarella
- 300 g mushrooms
- 4 tomatoes
- 500 g tomatoes, pureed
- salt and pepper
- basil
- Garlic
- 1 tsp coconut oil
- 100 ml Cremefine

Season the turkey schnitzel with salt and pepper. Heat coconut oil in a pan and sear the schnitzel until lightly browned. Slice the mozzarella, mushrooms, and tomatoes. Briefly sauté the mushrooms in the still-hot pan. Heat the passata with the cream in a saucepan, season with salt, pepper, basil, and garlic. Pour the sauce into a casserole dish, add the schnitzel, and top with tomatoes, mushroom slices, and mozzarella. Bake in a preheated oven at 200°C (top/bottom heat) until the cheese melts slightly. Garnish with basil and serve with herb baguette.
