Ingredients for 1 servings:

  • 50 g wholemeal pasta
  • 160 g cherry tomatoes
  • 1 cup mini mozzarella
  • 1 tbsp lemon juice
  • 1 avocado(s)
  • 1 handful of basil
  • 3 tbsp water
  • 1 pinch(s) of salt and pepper
  • 1 handful of leaf spinach (baby spinach) or lamb’s lettuce or arugula
  • 5 walnuts
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook 50 grams of whole-wheat pasta until al dente and let cool. Halve the cherry tomatoes and mini mozzarellas. Blend the avocado with 3 tablespoons of water, 1 tablespoon of oil, and 1 handful of basil leaves until creamy. Season with salt, pepper, and a little lemon juice. Layer in a sealable jar. First pasta, then avocado cream, tomatoes, mozzarella, and spinach. Sprinkle with a few crushed walnuts for a crunch. Perfect for the office and a colorful eye-catcher on a party buffet.
