Radish and apple salad

Ingredients for 2 servings:

  • 1 bunch of radishes
  • 1 gherkin(s)
  • 1 large apple, sour
  • 100g Gouda
  • 1 vegetable onion(s) or red onion
  • 3 sprigs of parsley, flat
  • 1 tbsp olive oil
  • ¼ lime(s), juice
  • 2 tbsp cucumber juice, approx.
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

with pickles, onions, Gouda and parsley

Cut the vegetables and apple into sticks, finely dice the cheese and onion. Roughly chop the parsley. Combine all ingredients in a bowl. Make a dressing with the oil, lime juice, and cucumber juice and pour over the ingredients. Season with salt and pepper. Let it sit for a moment, then serve. Serve with whole-grain bread and fresh butter.
