Spinach casserole with egg nests

Ingredients for 3 servings:

  • 1 packet of creamed spinach, approx. 500 g
  • 500 g jacket potatoes from the previous day
  • 3 eggs
  • some Parmesan or mozzarella, grated
  • 1 pinch of nutmeg
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Thaw the spinach in a casserole dish. Peel the potatoes, if they haven’t already, and cut them into small, bite-sized cubes. Mix the potatoes and spinach in the casserole dish. Add a generous pinch of freshly grated nutmeg. If desired, add a pinch of salt. Preheat the oven to 180°C. Make three wells in the potato mixture and crack a fresh egg into each one. Sprinkle the grated Parmesan cheese over the casserole. Bake in the preheated oven for approximately 20-30 minutes, until the eggs are set and the cheese is golden brown.
