Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 3 large tomatoes
  • 2 tbsp olives, pitted
  • 4 garlic cloves
  • 1 onion(s), red
  • 2 tsp, heaped herbs of Provence
  • 50 g almond flakes
  • 2 tbsp olive oil
  • 50 g Parmesan
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat the oven to 220 degrees Celsius (top/bottom heat). Thinly slice or slice the zucchini and tomatoes and arrange them in alternating layers in a shallow baking dish. Finely chop the onion, garlic, and olives in a food processor and mix with the almonds, Provençal herbs, and Parmesan cheese. Add the olive oil, season well, and mix well, then spread everything over the vegetables. Bake in the oven for 25 minutes, until the surface is nicely browned. Ciabatta cheese goes well with this dish.
