Ingredients for 2 servings:

  • 1 pack of Maultaschen (prepared dumplings) (vegetable Maultaschen are also welcome)
  • 2 carrots
  • 1 zucchini
  • 1 bell pepper
  • 2 spring onions
  • 1 pack of tomatoes, pureed
  • Grated cheese of your choice (Gouda, Emmental, Mozzarella…)
  • Tomato paste
  • Herbs as desired (e.g. basil, parsley, oregano)
  • salt and pepper
  • Paprika powder

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

“simple and easily adaptable”

First, cut the vegetables (carrots, bell peppers, and zucchini) into small pieces and the spring onions into rings (approx. 0.5-1 cm wide). Bring the passata to a simmer in a saucepan and add the carrots, cooking for about 5 minutes. Then add the bell peppers and zucchini and simmer for another 5 minutes. Meanwhile, grease the baking dish and cut the Maultaschen into pieces (approx. 2.5 x 1 cm). Season the vegetables with herbs, salt, pepper, and tomato paste, and stir in the spring onions. Alternate the vegetable sauce with the sliced ​​Maultaschen in two layers (finally with the sauce) in the baking dish and sprinkle everything with grated cheese. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes.
