Ingredients for 2 servings:
- 1 pack of Maultaschen (prepared dumplings) (vegetable Maultaschen are also welcome)
- 2 carrots
- 1 zucchini
- 1 bell pepper
- 2 spring onions
- 1 pack of tomatoes, pureed
- Grated cheese of your choice (Gouda, Emmental, Mozzarella…)
- Tomato paste
- Herbs as desired (e.g. basil, parsley, oregano)
- salt and pepper
- Paprika powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
“simple and easily adaptable”
First, cut the vegetables (carrots, bell peppers, and zucchini) into small pieces and the spring onions into rings (approx. 0.5-1 cm wide). Bring the passata to a simmer in a saucepan and add the carrots, cooking for about 5 minutes. Then add the bell peppers and zucchini and simmer for another 5 minutes. Meanwhile, grease the baking dish and cut the Maultaschen into pieces (approx. 2.5 x 1 cm). Season the vegetables with herbs, salt, pepper, and tomato paste, and stir in the spring onions. Alternate the vegetable sauce with the sliced Maultaschen in two layers (finally with the sauce) in the baking dish and sprinkle everything with grated cheese. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes.
