Currant quark casserole

Ingredients for 4 servings:

  • 500 g currants, washed, patted dry (or from the jar)
  • 4 eggs, separated
  • 500 g cream cheese
  • 50 g cornstarch
  • 100 g powdered sugar
  • 1 packet of vanilla sugar
  • 1 pack flavoring (Citro-Back)
  • 100 g sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine egg yolks, quark, cornstarch, powdered sugar, vanilla sugar, and Citro-Back. Beat the egg whites until stiff peaks form, gradually incorporating the sugar. Fold the egg whites, then 2/3 of the currants into the quark mixture. Pour everything into a greased 28 cm diameter baking dish and scatter the remaining berries on top. Bake in the oven at 200°C, fan oven 170°C, gas mark 3, for approximately 45 minutes. Dust with powdered sugar before serving.
