Broccoli Cauliflower Gratin

Ingredients for 4 servings:

  • 1 cauliflower, small
  • 400 g broccoli
  • 200 g carrot(s)
  • 200 g cooked ham
  • 50 g butter
  • 30 g flour
  • 250 g cream
  • 125 ml milk
  • 120 g Emmental cheese, grated
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut out the cauliflower stalk and remove both the larger and smaller leaves that are attached tightly. Divide the head into florets, wash, and drain. Wash and drain the broccoli. Separate the florets from the thick stalk, trim the stems slightly, make cross-shaped incisions, and peel only the stems. Trim and finely dice the carrots. Dice the ham. Bring salted water to a boil in a large pot and cook the cauliflower florets for three minutes. Then add the diced carrots and broccoli florets and cook together for another seven minutes. Drain and drain. Preheat the oven to 200°C. Melt the butter in a saucepan, add the flour, and sauté until lightly browned. Pour in the cream and milk, stirring constantly, and simmer for 3-4 minutes. Stir in the cheese, season, and simmer for another 2-3 minutes. Place the vegetables in a casserole dish, sprinkle with the ham, and pour over the cheese sauce. Bake in the oven for about 15 minutes until crispy.
