Ingredients for 4 servings:

  • 1 kg pumpkin(s), Hokkaido
  • 250 ml vegetable stock
  • 150 g ham, cooked
  • 250 ml milk
  • 150 g crème fraîche
  • 150 g cheese, Gouda, grated
  • 3 eggs
  • 1 tbsp parsley, chopped
  • salt and pepper
  • Cayenne pepper
  • 50 g cheese, Gouda, grated
  • 1 tbsp parsley

delicious, simple pumpkin recipe

Preheat oven to 180°C. Halve the pumpkin and remove the seeds. Cut the pumpkin flesh into 2-3 cm thick slices. Cook the pumpkin pieces in the broth for about 8-10 minutes until al dente. Cut the ham into strips and layer them with the pumpkin in a shallow, greased baking dish. For the sauce, whisk together the milk, crème fraîche, cheese, and eggs. Add the parsley, salt, pepper, and cayenne pepper. Pour the sauce over the casserole and sprinkle with cheese. Bake in the preheated oven for about 30 minutes. Sprinkle with parsley and enjoy! It’s also delicious cold.
