Crab soup with dill

Ingredients for 4 servings:

  • 1 tbsp butter
  • 30 g flour
  • 1 liter vegetable broth
  • 100 ml white wine
  • salt and pepper
  • 200 g sweet cream
  • 300 g North Sea crab meat
  • ½ bunch of dill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Melt the butter in a saucepan and sauté the flour in it. Deglaze with the broth and wine. Bring to a boil and simmer for about 5 minutes, then season with salt and pepper. Whip the cream until stiff peaks form and stir 2/3 of it into the hot soup. Add the crab meat. Wash and chop the dill. Serve the crab soup garnished with the remaining cream and dill.
