Wholemeal spelt bread

Ingredients for 1 servings:

  • 500 g wholemeal spelt flour
  • 750 g low-fat curd cheese
  • 5 tbsp cereal flakes (5 grain mix)
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp flaxseed
  • 2 tbsp sesame seeds
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

without yeast, from a loaf pan

Mix all ingredients and knead thoroughly. If the dough is too dry, add a tiny bit of water. Line a loaf pan with baking paper and bake the bread in the oven at 180 degrees Celsius (top/bottom heat) for 1 hour. Instead of individual seeds, you can also use the appropriate number of tablespoons of a seed mix. I also like to add psyllium or chia seeds. If you don’t have wholemeal spelt flour at home, you can also use plain spelt flour.
