Ingredients for 4 servings:
- 500 g floury potatoes
- 1 liter beef broth (beef soup)
- 100 g bacon
- 2 large carrots
- Crème fraîche
- pepper
- Salt
- marjoram
- Caraway seeds
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
potato soup
Peel the potatoes, cook them in the beef broth until soft, then puree them. Season and add crème fraîche to taste. Slice the carrots, blanch them, and add them to the soup with the roasted bacon. The Waldviertel region is located in northwest Lower Austria, on the border with the Czech Republic.
