Minced meat casserole with feta cheese and zucchini

Ingredients for 4 servings:

  • 500 g minced meat, mixed or beef
  • 500 g potatoes
  • 500 g zucchini
  • 200 g sheep’s cheese or feta
  • 2 onions
  • 2 cloves garlic, fresh
  • chili sauce
  • Soy sauce
  • salt and pepper
  • basil
  • oil
  • 200 g cream
  • 100 g cheese (Gouda), grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and slice them thinly. Wash the zucchini, halve them, and slice them thinly. Add them to plenty of salted water with the potatoes and cook for a maximum of 5 minutes. Add the oil to a pan and fry the minced meat thoroughly. Finely dice the onion and garlic, add them, and fry briefly. Season with chili sauce, soy sauce, pepper, and basil to taste. Let cool. Be careful not to overseason, as the salty feta cheese will be added later. Brush a baking dish with oil and arrange the potato and zucchini slices in it. Crumble the feta cheese into the minced meat mixture, mix, and add the cream. If you prefer a denser casserole, you can whisk two eggs into the cream beforehand. Spread the mixture over the vegetables, sprinkle with the grated Gouda, and bake at 200°C for about 30 minutes.
