Pea salad with avocado and mint

Ingredients for 4 servings:

  • 500 g peas, fresh, split (alternatively frozen)
  • 1 avocado(s)
  • 5 fresh mint leaves
  • olive oil
  • 1 dashes lemon juice, fresh
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the peas until al dente (steam or stew). Then let them cool. Peel and dice the avocado. Place the peas and avocado in a bowl. Add salt, pepper, olive oil, lemon juice, and finely chopped mint and mix gently.
