Zucchini casserole

Ingredients for 6 servings:

  • 1 onion(s) (vegetable onion)
  • 750 g minced meat, mixed
  • 1 small can of tomatoes
  • 2 tbsp tomato paste
  • salt and pepper
  • 2 ½ tsp oregano
  • 750 g zucchini
  • 20 g margarine
  • 20 g flour
  • 125 ml broth
  • 125 ml milk
  • 200 g cream cheese spread
  • nutmeg
  • Cheese, Gouda slices, as many as fit on the baking dish
  • 100 g pasta, e.g. spirelli, cooked

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the onion. Brown the minced meat in hot fat until crumbly, add the diced onion, and sauté until translucent. Add the canned tomatoes with the liquid, tomato paste, salt, pepper, and oregano. Sauté uncovered until the liquid has evaporated. Dice the zucchini. Melt the margarine in a saucepan. Sauté the flour in it, then add the broth and milk. Melt the processed cheese in it. Season with salt, pepper, and nutmeg. Spread the cooked pasta in a greased baking dish. Top with the zucchini, then the minced meat and cheese sauce. Cover the casserole with the Gouda slices. Place in the preheated oven. Cook at 200°C (no fan) for about 30 minutes.
