Ingredients for 4 servings:

  • 4 cod fillets
  • 500 g leaf spinach, frozen
  • 1 onion(s), chopped
  • 2 garlic cloves, finely chopped
  • 2 tomatoes, sliced
  • 1 tsp, heaped stock, granulated
  • 1 cup sour cream
  • 100 g Parmesan, grated
  • salt and pepper
  • 1 tsp Italian herbs (thyme, oregano, basil, rosemary)
  • some lemon juice
  • some butter for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Clean, acidify, and salt the cod fillets, place them in a greased, shallow baking dish, and top with the tomato slices. Sauté the onion and garlic in the butter. Add the spinach and thaw over low heat. Season everything generously with stock, herbs, salt, and pepper. Stir in the sour cream and spread the mixture over the fish. Bake in an oven preheated to 180°C for about 50 minutes. Sprinkle with cheese halfway through cooking.
