Ingredients for 5 servings:

  • 200 g whole-grain pasta (e.g. Fleckerl)
  • salt water
  • 250 g quark
  • 150 g butter
  • 200 g ham
  • 3 eggs, separated
  • 100 g cheese (Gouda)
  • 1 onion(s)
  • 2 cloves garlic
  • 5 tbsp herbs (parsley, chives, chervil, lovage, basil, oregano), chopped
  • some oil
  • e.g. salt and pepper
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Cook the pasta in salted water until al dente. Strain and drain in a sieve. Mix the egg yolks with the quark. Stir in the chopped herbs and stir well again. Whisk the egg whites until stiff peaks form. Dice the onion, ham, and Gouda cheese. Sauté the onion in a little oil until translucent. Then add the ham, Gouda cheese, and the cooked pasta, stir well, and remove from the heat. Mix in the herb quark, fold in the beaten egg whites, and pour the mixture into a greased baking dish. Bake in a preheated oven on the middle rack at 200°C for about 30 minutes. Sprinkle with chopped chives before serving.
