Autumnal Low Carb Apple Cake

Ingredients for 1 servings:

  • 200 g almonds, ground
  • 50 g oat bran
  • 50 g coconut flour or almond flour
  • 1 tbsp cream of tartar baking powder
  • 1 tbsp vanilla sugar
  • 2 tbsp stevia powder
  • 4 tbsp coconut oil
  • 1 tsp cinnamon powder
  • 1 pinch of salt
  • 5 tbsp applesauce
  • 4 eggs
  • 4 apples
  • 1 tbsp coconut flakes or almonds, chopped
  • 2 tbsp coconut blossom sugar
  • 1 tsp cinnamon powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

for a 26cm springform pan

Preheat the oven to 180°C (top/bottom heat). Peel and slice 4-5 apples, and place them in a bowl with the cinnamon, coconut blossom sugar, and 1-2 tablespoons of coconut flakes or chopped almonds. Mix all ingredients together and set aside. Now add all dry ingredients to another bowl and mix. Add the eggs and applesauce. Mix everything with a hand mixer until a smooth batter forms. Pour the batter into a 26cm springform pan and arrange the prepared apple slices on top. Bake the cake for 45 minutes at 180°C (top/bottom heat). Let cool and serve.
