Strawberry curd strudel

Ingredients for 4 servings:

  • 300 g strawberries
  • 1 packet of vanilla sugar
  • 50 g strawberry jam
  • 1 pinch of salt
  • 80 g walnuts, chopped
  • 2 eggs
  • 100 g butter
  • 100 g powdered sugar
  • 500 g quark (cottage cheese)
  • 40 g vanilla pudding powder
  • 2 rolls (to taste atter dough, frozen
  • 1 egg(s) for brushing

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Cut the strawberries into pieces and mix with the vanilla sugar, strawberry jam, and walnuts. Separate the eggs. Beat the egg yolks, butter, powdered sugar, and salt until frothy. Stir in the curd cheese and custard powder. Beat the egg whites until semi-stiff and fold in. Place the puff pastry on a baking sheet and spread the curd mixture in the center. Place the strawberries on top and roll up the puff pastry. Prick the pastry with a fork and brush with beaten egg. Bake at 190°C (top/bottom heat) for about 35 minutes.
