Potato and sausage casserole

Ingredients for 3 servings:

  • 1 ½ kg potatoes
  • 700 g bratwurst
  • 1 large onion(s)
  • 1 bell pepper(s)
  • 1 tbsp salt
  • some pepper
  • some paprika powder, hot
  • some sweet paprika powder
  • 1 cup of cream
  • 2 eggs
  • 1 bunch of chives
  • 3 tbsp olive oil
  • 1 tsp mustard, medium hot

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Boil the potatoes in their jacket potatoes, peel the onion and dice them into small cubes, and trim and chop the bell peppers. Add a little oil to a pan and fry or braise the onion and bell peppers. Remove the skin from the sausage and cut it into 1 cm pieces, then fry until golden brown. Once cooked, peel the potatoes, slice them, and layer them in the casserole dish. Sprinkle the braised onions and bell peppers over them. Season with salt and pepper. Whisk the cream with the mustard, eggs, and paprika and carefully pour it over the mixture. Then bake everything in the oven on the middle rack at 200°C for about 25 minutes. Once baked, sprinkle some chives over the top – done.
