Fried zucchini salad

Ingredients for 6 servings:

  • 1 kg zucchini, not too big
  • 1 large onion(s), finely chopped
  • 6 garlic cloves, finely chopped
  • 8 tbsp olive oil
  • 2 lemon(s), the juice
  • salt and pepper

Instructions

Wash the zucchini, trim off the ends, peel if necessary if it is not organic, and cut or grate into approximately 2 mm thick slices. Finely chop the onion and garlic cloves. Heat oil in a pan and fry the zucchini slices on both sides until they begin to brown. Then remove from the pan and let the oil drain on kitchen paper. Briefly sauté the chopped onion and garlic in the same pan with oil. Place the zucchini slices, onion, and garlic cubes in a bowl. Squeeze the lemons, pour the juice over the vegetables, and season well with salt and pepper. Since the salad can be eaten hot or cold, both are delicious; please season with salt and pepper again if eating it cold. With baguette, this salad is also a main meal for us in the summer.
