Yogurt waffles

Ingredients for 3 servings:

  • 250 g flour
  • 75 g sugar
  • 125 g butter, soft
  • 2 eggs
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 200 g natural yogurt
  • 1 tsp baking powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

In a bowl, mix the flour and baking powder and set aside. In another bowl, beat the softened, but not melted, butter with the sugar and vanilla sugar on high for a good 3 minutes until creamy. Now gradually add the eggs. Beat each egg for at least 1 minute, then add the next egg. Now add the yogurt and fold in briefly. Finally, pour the flour and baking powder mixture over the mixture and mix until the flour is evenly distributed. The batter should end up neither too thick nor too runny. If it isn’t, add a little more sparkling water or a little more flour. Once all the ingredients are mixed together, cover the bowl and let the batter rest in a warm place for a good 30 minutes. Brush the heated waffle iron with a little oil and pour in some batter. After about 2 minutes of baking time (depends on the appliance, so please pay attention and check if necessary), carefully remove the waffles. Brush the waffle iron with oil again and pour in some more batter. Sprinkle the finished waffles with sugar and cinnamon, if desired, or serve with applesauce. The waffles taste especially good when flavored with yogurt, such as lemon, strawberry, vanilla, etc.
