Apple pancakes

Ingredients for 3 servings:

  • 250 g flour
  • 250 ml mineral water (sparkling)
  • 250 ml milk
  • 500 g apples
  • 2 eggs
  • 1 pinch of salt
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 3 tbsp sugar
  • lemon juice
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the flour, baking powder, and sugar in a bowl, then stir in the eggs, milk, and sparkling water/water. Let it sit for about 15 minutes. In the meantime, halve and quarter the apples, and remove the cores. Cut the apples into pieces of any size and sprinkle with cinnamon, if desired (it’s best to also drizzle with a little lemon juice to prevent the apple pieces from browning). Once the pancake batter has rested (at least 15 minutes), carefully stir in the apple pieces. Heat oil or butter in a pan and add the pancake batter (this is best done with a small ladle). Cook the bottom side over moderate heat until golden brown. When the surface bubbles or becomes slightly firm, flip the pancake and carefully cook the other side until golden brown. The pancakes taste especially delicious sprinkled with cinnamon and sugar, or with applesauce! (The fizz makes the pancakes even lighter and extra fluffy)
