Pasta with zucchini and Roquefort sauce

Ingredients for 2 servings:

  • 2 zucchinis
  • 1 spring onion(s)
  • 50 g pine nuts
  • 150 g blue cheese (Roquefort)
  • 200 ml cream
  • Fresh herbs, to taste
  • salt and pepper
  • olive oil
  • 250 g spaghetti or tagliagtelle
  • Water

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Fast, tasty, and vegetarian

First, boil water with a little salt for the pasta. When the water is boiling, cook the spaghetti or tagliatelle al dente. In the meantime, heat a pan with a little oil. Wash the zucchini, dice it, and add it to the pan. Wash and slice the spring onions and add them to the fried zucchini along with the pine nuts. Sauté briefly. Then add the cheese and cream and simmer for 5 minutes. Season to taste with pepper (salt to taste; the cheese is seasoned enough) and fresh herbs, and serve with the pasta. Tip: If you fancy meat, you can also add some turkey strips.
