Chicken breast cubes in tomato and bacon sauce

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 100 g smoked bacon
  • 100 g cream
  • 100 ml vegetable stock
  • 1 shot of red wine
  • 2 small onions
  • 2 cloves garlic
  • 4 tomatoes (vine tomatoes)
  • Salt
  • pepper
  • Oil for frying
  • 1 tsp tomato paste
  • oregano
  • basil
  • Thyme

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the chicken breast and cut into 2 cm cubes. Finely dice the bacon and onions. Peel and roughly chop the tomatoes, if necessary. Heat the oil and fry the meat cubes until browned all over, season, remove from the pan, and keep warm. Add the bacon to the pan and fry, then add the diced onion and press in the garlic. Continue frying until the onions are translucent. Toast the tomato paste in the pan for a while, then add the tomato pieces and season. Add the herbs and let the whole thing simmer. Stir in the vegetable stock, cream, and red wine and reduce slightly. Add the meat to the sauce and season well again. Tagliatelle goes best with this.
