Low Carb Pizza – Basic recipe with sauerkraut

Ingredients for 4 servings:

  • 500 g sauerkraut from the bag
  • 4 eggs
  • 1 tsp, heaped guar gum
  • 225 ml tomato paste and/or mixed tomato sauce, according to taste
  • 125 g cheese, grated
  • Herbs as desired
  • ½ large zucchini

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

To make the dough, squeeze the juice out of the sauerkraut, e.g. in a colander. Put the sauerkraut in a large mixing bowl and sprinkle the sifted guar gum over it, add the 4 eggs and mix everything together vigorously until the dough is slightly foamy. Season to taste, but it tastes good without too much seasoning. Preheat the oven to 175°C, line a baking pan (round or square pizza pan, approx. 29 x 29 cm) with baking paper, pour in the dough and bake for 30 minutes. Remove the lightly browned dough from the oven, pour on the tomato paste and sauce mixture. Spread 1/3 of the grated cheese on the pizza. Slice the zucchini and top the pizza. Sprinkle with the rest of the cheese and return the pizza to the oven and bake for approx. 15 minutes.
