Ingredients for 2 servings:

  • 2 egg whites
  • 1 tbsp gluten (wheat gluten)
  • 2 tbsp soy flour
  • salt and pepper
  • Paprika powder
  • Basil or pizza seasoning
  • ½ bell pepper
  • some mushrooms
  • 70 g mozzarella or other cheese
  • 1 tbsp sunflower seeds or similar

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C fan/convection oven. Dice the bell peppers, mushrooms, and cheese. Beat the egg whites with a pinch of salt until stiff peaks form. Dry mix the wheat gluten and soy, then add to the egg whites and stir to combine. Add the mixture to the vegetables along with the sunflower seeds, season, and mix well with your hands. Using a tablespoon, place 12 small heaping spoonfuls of the mixture onto a baking sheet lined with baking paper and press firmly together to form small discs. Bake in the middle of the oven for about 20 minutes. This makes a perfect leftover dish. Other vegetables can also be used. The soy flour can be substituted with other low-carb flours.
