Midsummer Night's Dream Pasta Salad

Ingredients for 6 servings:

  • 350 g pasta of your choice
  • 250 g cooked ham or chicken breast
  • 100 g bell pepper(s)
  • 50 g onion(s)
  • 250 g pineapple from the can
  • 250 g peach(s) from the can
  • 4 egg yolks
  • ⅛ liter of oil
  • 2 tbsp mustard
  • 20 g sugar
  • 25 g vinegar
  • 75 g pineapple juice
  • 2 cups sour cream

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with homemade mayonnaise

Cook the pasta as usual in salted water, then rinse and let cool. Meanwhile, place the peaches and pineapple in a sieve and let drain. Reserve the pineapple juice. Finely dice the onion and bell pepper. Dice the cooked ham, pineapple and peaches. For the salad dressing, whisk the 4 egg yolks. Slowly stir in the oil (drop by drop). Gradually add the mustard, sugar, vinegar and pineapple juice and stir in. Finally, stir in the sour cream and season with salt and pepper. Mix the mayonnaise with the remaining ingredients and let the salad marinate for at least 4 hours, preferably overnight. Be careful with the mayo! Because it contains raw egg, this salad has a short shelf life and must be refrigerated.
