Asparagus with ham strips and herb sauce

Ingredients for 4 servings:

  • 200 g asparagus
  • 200 g ham, cooked
  • 20 g butter
  • 20 g flour
  • 250 ml broth (asparagus broth)
  • 125 ml milk
  • 1 pack of herbs (8-herb mix, frozen)
  • 200 g blue cheese
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Alternative to hollandaise sauce

Peel the asparagus and boil it in water with a pinch of sugar for about 10 minutes. Make a roux from the butter and flour, pour in the asparagus broth and milk, and simmer for a while. Strain the asparagus through a sieve and stir in the herbs. Slice the ham and fry briefly. Arrange the well-drained asparagus in a shallow dish and cover with the sauce, then arrange the ham strips on top. Top with cheese slices and bake for about 20 minutes. Serve with new potatoes lightly fried in butter with chives.
