Haddock with thyme and mustard sauce

Ingredients for 2 servings:

  • 400 g haddock fillet(s)
  • n. B. Salt
  • 1 bay leaf
  • ½ tsp peppercorns
  • 30 g butter
  • 15 g flour
  • 300 ml milk, cold
  • 4 tbsp dry white wine
  • 1 tsp mustard, grainy
  • ½ bunch thyme, fresh
  • e.g. salt and pepper
  • n. B. sugar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

the fish is steamed

Melt the butter in a small saucepan. Add the flour and sauté slightly. Deglaze with the cold milk and simmer gently. Add the white wine, mustard, and thyme, and season with salt, pepper, and sugar. Wash, dry, and salt the fish. Place water in a pot and bring to a boil with the salt, peppercorns, and bay leaf. Place the fish on a steamer and steam for about 5-8 minutes. Serve with boiled potatoes and leeks.
