Steamed Skrei with lemon zabaione à la Didi

Ingredients for 2 servings:

  • 2 slice fillets (winter cod) à 150 g
  • 3 medium-sized egg yolks
  • 70 ml white wine
  • 3 tbsp lemon juice
  • ½ tbsp flour
  • n. B. Salt and pepper, white, ground
  • 1 pinch(s) of sugar
  • 1 tsp, leveled turmeric
  • 1 tsp Herbes de Provence, freeze-dried
  • 1 tbsp Calvados
  • 150 g butter, liquid

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Rinse the skrei fillets, pat dry, and remove any remaining bones. Grease a piece of baking paper with butter, place it in the steamer basket of a steamer, and place the skrei fillets on it. Bring water to a boil in the steamer, place the steamer basket on top, and steam the fillets for approximately 10-15 minutes. In the meantime, prepare the zabaione. Whisk the egg yolks, white wine, lemon juice, spices, herbs, and flour. Once the mixture is foamy, gradually add the melted butter. Serve the skrei fillets with the zabaione. The wine used for the preparation is recommended as a drink. Pasta, rice, or potatoes go well with this dish.
