Ingredients for 4 servings:
- 8 large potatoes, peeled, chopped
- 100 ml oil
- 3 egg yolks
- 1 pinch of salt
- 1 pinch(s) of cayenne pepper
- 1 tbsp basil, finely chopped
- 1 tbsp chicken broth, gives an extraordinary flavoring
- 1 pinch(s) chicken seasoning, forms the fine crust

Delights every palate. Simple and quick to prepare.
First, peel 8 to 10 large potatoes and wash them thoroughly. Let them dry on a clean kitchen towel. Meanwhile, prepare the mayonnaise. Finely mix the oil, egg yolk, salt, pepper, basil, and chicken stock until smooth. Cut the potatoes into small slices and then quarter them. The size can vary depending on your preference, but they shouldn’t be too thick; 1 cm is sufficient. Place the potatoes on a baking sheet lined with baking paper and pour the sauce over them. Finally, add a pinch of roast chicken seasoning to crisp them up. Bake at 220°C for 45 minutes.
