Redfish with sweet and sour sauce

Ingredients for 4 servings:

  • 4 redfish fillets
  • 15 g margarine
  • 1 onion(s), finely chopped
  • ⅛ liter fish stock (alternatively: vegetable stock)
  • ⅛ liter orange juice, fresh
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 2 tsp sugar
  • 1 tbsp corn flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the redfish in a pot large enough to fit side by side. Add cold water until covered and simmer gently for about 10 minutes. Meanwhile, melt the margarine in a pot and sauté the onion for about 5 minutes until softened. Add the broth, orange juice, vinegar, soy sauce, and sugar and stir to combine. Mix the cornflour with a little water to form a paste and stir it in. Let it cook for another 5 minutes. Transfer the fillets to plates and pour the sauce over them. I serve the fish with mashed potatoes and bell peppers.
