Fennel – Melon – Salad

Ingredients for 4 servings:

  • 1 bulb/n fennel (approx. 650 g)
  • 600 g melon(s) (watermelon)
  • 8 slices of Parma ham
  • 2 tsp basil, chopped
  • 2 tsp lemon juice
  • 2 tbsp olive oil
  • pepper
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the fennel bulb and slice it as finely as possible. Place it in a bowl. Mix with salt, pepper, and basil and knead vigorously for 2-3 minutes. Add the lemon juice and olive oil and let it stand for 10 minutes. Meanwhile, deseed most of the watermelon and cut it into cubes. Mix it with the fennel strips. Arrange the Parma ham on plates and add the salad. Season with pepper and serve immediately. The anise flavor of the bulb pairs perfectly with the watermelon and Parma ham.
