Ingredients for 1 servings:

  • 120 g sugar
  • 350 g flour
  • 150 g butter
  • 2 eggs
  • 1 tsp organic lemon peel or organic lime peel, finely grated
  • 1 pinch of salt
  • 160 g Lemon Curd, equivalent to approx. 1/2 jar
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes

Make a dough from sugar, flour, butter, eggs, lemon zest, and salt. Form it into three logs, each approximately 3-4 cm in diameter. Place the logs on a cutting board, cover with cling film, and chill for at least 30 minutes. Then cut the dough into slices approximately 1 cm thick and place on a baking sheet lined with baking paper. Make indentations using a melon baller or teaspoon, or even your middle finger, and fill with lemon curd. Preheat the oven to 170°C (fan oven) and bake the logs on the middle rack for 8-12 minutes. Sprinkle the pastries with powdered sugar while they are still warm.
