Fruit salad with turkey breast

Ingredients for 4 servings:

  • 500 g turkey breast
  • 750 g frozen fruit (tropical fruit)
  • 4 tbsp oil (peanut oil)
  • 1 avocado(s)
  • 1 lemon(s)
  • Sea salt
  • Paprika powder, sweet
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Thaw the fruit and place in a bowl. Halve the avocado with a sharp knife and remove the pit. Scoop out the flesh from the skin and cut into fine cubes, drizzle with lemon juice, and add to the fruit. Stir in two tablespoons of peanut oil, a pinch of sea salt, and a pinch of cayenne pepper. Let the salad marinate in the refrigerator for one hour. Cut the meat into strips across the grain. Season with sea salt and paprika. Heat two tablespoons of peanut oil in a non-stick pan. Fry the turkey strips until golden brown all over, remove, and keep warm. To serve, transfer the salad to the plates and place the still-warm turkey strips on top.
