  • 750 g potatoes
  • Salt
  • 1 bunch marjoram, fresh
  • 250 g whipped cream
  • 2 egg yolks
  • Pepper, black from the mill
  • 40 g butter

Wash, peel, and thinly slice the potatoes, then simmer gently in lightly salted water for 4-5 minutes. Drain well in a colander. Strip the marjoram from the stems and finely chop. Whisk together the cream and egg yolk, season generously with salt, pepper, and marjoram. Grease an ovenproof dish well and layer half of the potatoes. Finely dice the bacon and spread half of it over the potatoes. Season with salt and pepper. Arrange the remaining potato slices on top, pour the egg cream over them, and sprinkle the remaining bacon cubes over them. Place knobs of butter on top. Bake in the oven at 250°C for about 30-40 minutes; the potatoes should be golden yellow. Serve with a green salad. Marjoram potatoes also go well with briefly roasted meat.
