Radish – radish – salad

Ingredients for 12 servings:

  • 2 white radishes, approx. 600 g each
  • Salt
  • 2 bunch radishes
  • 1 bunch of dill
  • 100 g smoked streaky bacon
  • Pepper, white
  • ⅛ liter vinegar, white wine vinegar
  • 5 tbsp oil

Instructions

Working time approx. 45 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 45 minutes

Peel and wash the radishes. Cut into thin spirals using a radish cutter or into thin slices with a knife. Sprinkle lightly with salt, cover, and let stand for about 30 minutes to allow the juices to develop. Trim, wash, and quarter the radishes. Wash the dill, shake dry, and finely chop, reserving a little for garnishing. Dice the bacon, fry until crispy, and season with pepper. Stir in the vinegar and oil and bring to a boil briefly. Add the resulting radish juice to the bacon marinade. Add the dill and mix everything together. Mix the radish quarters and the radish spirals or slices and pour the bacon sauce over the salad. Let stand for a while and then season the salad again to taste. Garnish with the remaining dill. Tastes great with Leberkäse (meatloaf) and Weißwurst (white sausage).
