Ingredients for 4 servings:
- 800 g potatoes (sweet potatoes)
- Salt
- Butter for the mold
- 100 g sugar, brown
- 6 tbsp orange juice
- 50 g butter

Glazed sweet potatoes
Wash the sweet potatoes and cook them covered in lightly salted water over medium heat for about 10 minutes until just tender, then drain, let cool slightly, and peel. Grease a shallow baking dish with butter. Cut the sweet potatoes into 1-2 cm thick slices and arrange them in the prepared dish in the shape of roof tiles. Place the sugar and orange juice in a small saucepan and melt the sugar over low heat. Stir in the butter and let it melt. Drizzle this syrup over the potatoes and bake everything in the oven (center, gas mark 2, fan oven 160°C) for about 20 minutes. Variation: You can also stir a little whiskey and grated lemon zest into the sugar sauce and/or sprinkle chopped pecans over the sweet potatoes before baking.
