Ingredients for 12 servings:
- 1 m.-large goose breast
- 300 g minced beef
- 1 bunch of soup vegetables
- 1 m.-sized apple
- 1 onion(s)
- 300 g red cabbage from the jar
- 3 kg potato(s), waxy
- 300 g potato flour
- 3 eggs
- 180 g butter
- 12 slices of raclette cheese
- salt and pepper
- nutmeg
- marjoram
- Broth, granulated
- Maggi
Instructions

for those who don’t want to miss out on pizza even with goose, red cabbage and dumplings
The day before: Remove the goose breast from the bone, trim it, and slice it. Season the slices moderately with salt and pepper. Cover and refrigerate overnight. Filling: Clean the bones and any suitable leftover breast and boil it with the coarsely chopped vegetables in a pot of water. Then let it cool. Grate the onion and apple into a bowl, add the minced meat, a little granulated stock, and some of the vegetables. Mix everything together and season with salt, pepper, marjoram, and Maggi. Cover and refrigerate overnight. On the day of eating: Potato dough (as for boiled dumplings): Peel the potatoes and boil them in salted water. Press the boiled potatoes into a large bowl. Add the butter and let it melt slightly. Add the potato flour, beat the eggs, and add them to the mixture, along with about 2 teaspoons of salt, 1/2 teaspoon of pepper, and a pinch of nutmeg. Mix everything well until the dough forms a smooth mass. If desired, season with salt, pepper, and nutmeg. Let the dough cool slightly. Assemble the pizza: Place the pizza on a baking sheet lined with baking paper. Spread out the still-warm potato dough. It’s a good idea to create a small bulge around the edge to prevent any leakage. Let it cool slightly. Spread the filling on the base. Drain or squeeze the red cabbage and spread it evenly over the filling. Arrange the goose slices on the pizza. Depending on the size of the breast, the density may vary. Then place the cheese slices on the goose. If you want to omit the cheese, feel free to do so, but it may cause the goose to dry out a little. I also like to use the cheese to mark the pizza slices. The pizza can now either be prepared immediately or set aside in the oven until ready to cook. Preheat the oven to 180°C (top and bottom heat). Place the pizza in the preheated oven and bake for 30-40 minutes. When the cheese has melted well and is starting to crisp, it’s cooked through. If you didn’t use cheese, you can use the goose slices or skin as a guide; this will also be a bit crispy. Remove the pizza from the oven, cut into 12 slices, and serve.
