Milanese pasta salad

Ingredients for 4 servings:

  • 250 g pasta
  • 1 onion(s)
  • Parsley
  • 3 gherkins
  • 200 g ham (sausage or meat leftovers)
  • 2 tomatoes
  • 2 eggs
  • 100 g cheese, e.g. Emmental
  • 250 ml sour cream
  • 2 eggs, including the yolk
  • 2 tbsp oil
  • 2 tbsp mustard
  • 1 tbsp lemon juice
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook the pasta. Finely chop the onion, parsley, and gherkins. Dice the tomatoes. Hard-boil, peel, and chop the eggs. Grate the cheese. Mix all ingredients well. Whisk the sour cream, egg yolk, oil, mustard, lemon juice, salt, and pepper together and mix well with the pasta mixture. Chill and let it marinate. The salad can be garnished with tomato slices. Serve with baguette.
