Buttermilk bread

Ingredients for 1 servings:

  • 400 g rye flour
  • 200 g wheat flour
  • 1 packet of dry yeast or 20 g fresh yeast
  • 1 tbsp salt
  • ½ liter buttermilk
  • 1 tbsp vinegar
  • 1 tbsp lemon juice

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Mix the ingredients well, then knead for at least 15 minutes until you have a soft and elastic dough. Let the dough prove for about 20 minutes. Shape the bread, place it on a baking tray lined with baking paper, and let it prove for another 20 minutes. Place in a preheated oven at 250°C (top/bottom heat). Place a pan of hot water on the floor of the oven. Bake for about 10 minutes. Then turn the oven down to 200°C and bake for another 50 minutes.
