Ingredients for 1 servings:
- 225 g butter, soft
- 90 g powdered sugar
- 2 tsp lemon zest, grated
- 1 tsp vanilla flavor
- 1 pinch of salt
- 200 g flour
- 170 g white chocolate, chopped into pieces
- Powdered sugar, for dusting

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours
In a large bowl, cream the butter until creamy. Beat in the lemon zest, vanilla, and powdered sugar. Add the flour and salt and mix until the mixture is lightly crumbly, adding more flour if necessary. Add the chocolate pieces, fold in well, and turn the dough out onto the countertop. Knead with your hands until smooth. Wrap in cling film and refrigerate for one hour. Preheat the oven to 180°C. Either roll the dough into ping-pong-sized balls by hand and flatten lightly, or roll out the dough and cut out shapes. Place the cookies on a baking sheet lined with baking paper and bake for 15-20 minutes, until lightly golden brown. Cool on a wire rack and dust with powdered sugar. Makes approximately 40 cookies.
