Ingredients for 2 servings:
- 2 chicken breasts
- Herbal salt (e.g. “Rustica”) from the mill
- Garlic
- Pepper from the mill
- Paprika powder, sweet
- 2 onions
- 2 tomatoes or
- some cocktail tomatoes
- 2 tbsp oil
- some white wine
- some honey
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
with herb salt, simply delicious!
Wash the chicken breasts and pat dry. Rub both breasts with herb salt, pepper, garlic, and paprika powder and briefly sear them on both sides in a hot pan with oil. Then place the breasts in a greased baking dish and brush with honey to taste (I always use a honey dispenser, as it’s easy to spread). Then arrange the peeled and quartered onions and tomatoes around the chicken breasts. Finish cooking in a preheated oven at around 180°C for about 20 minutes. You can drizzle with a little more white wine about halfway through cooking for a little more sauce. Serve with olive bread or oven-baked potato wedges and vegetables.
