Ingredients for 4 servings:
- 2 chicken schnitzels or turkey schnitzels
- 250 g rice
- 1 zucchini
- 1 bell pepper(s), red
- ½ can corn
- 1 onion(s)
- 1 cup sour cream or crème fraîche
- 150 ml vegetable stock
- salt and pepper
- 1 tbsp margarine
- Paprika powder or curry powder
- possibly vegetable broth, instant
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cut the meat into strips. Melt the margarine in a pan and fry the meat strips in it. In the meantime, cut the zucchini into half slices, cut the bell pepper into bite-sized pieces, and finely chop the onion. Drain the corn. Add the rice. Remove the meat from the pan as soon as it is cooked. Add the zucchini slices, onion pieces, and bell pepper pieces to the pan and fry until the vegetables are soft. Then add the corn. Pour in the vegetable stock and let it simmer briefly. When the rice is cooked, drain the cooking water and add the rice to the pan. Add the meat as well. Stir in the sour cream until it is evenly distributed. Now season the dish with salt, pepper, paprika powder or curry powder, and a little more vegetable stock if desired. Serve immediately.
