Ingredients for 6 servings:
- 8 tbsp mustard
- 9 tbsp olive oil
- 2 tbsp lemon juice
- 400 g beef fillet(s) or lamb fillet
- some salt
- some pepper
- 150 g arugula
- 250 g tomatoes
- 1 bunch of basil
- 2 baguettes
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Mix 5 tablespoons of mustard with 5 tablespoons of olive oil and lemon juice. Season the meat with salt and pepper and spread with the mustard paste. Marinate in the refrigerator for about 3 hours. Wash the arugula, tomatoes, and basil. Cut the tomatoes into 1 cm thick slices. Heat the remaining oil in a pan. Fry the fillet slices in it (or grill them on the beach). Halve the baguettes lengthwise, then cut into approximately 15 cm long pieces and spread the remaining mustard on the cut surfaces. Fill the baguette pieces with arugula, tomato slices, basil leaves, and beef fillet and serve.
