Asian-spicy, goes well with rice and fish

First, finely chop the ginger and garlic. Then, dice half the bell pepper and carrot, and halve the snow peas. Sauté the garlic and ginger in hot oil, then add the diced bell pepper and carrot and sauté until al dente. Add the snow peas and sprouts and sauté briefly until the mixture is reduced by about half. Stir in the sambal oelek and deglaze with the soy sauce. Let it reduce slightly further and serve over rice.
