Floo's Quark – Semolina – Cake with Fruit

Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 1 egg(s)
  • 75 g butter / margarine
  • 75 g sugar
  • 1 jar sour cherries, well drained
  • 3 apples
  • 500 g quark
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 lemon(s), peel (or a pack of Citroback)
  • 3 eggs
  • 25 g semolina (soft wheat)
  • 3 tbsp breadcrumbs
  • 2 tbsp cream
  • 1 pack of cake glaze (red)

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Dough: Mix all ingredients into a dough and then chill for about 30 minutes. Pour into a 26cm springform pan and pull up a 1-2cm edge. For the filling, peel and core the apples and cut into large pieces (8 of approx. 1cm). Sprinkle the pastry base with breadcrumbs and spread half of the fruit (cherries & apples) on top. Mix the quark, sugar, vanilla sugar, lemon zest, eggs, semolina and cream well together and spread on the fruit. Spread the remaining apple pieces over the quark mixture. Reserve the remaining cherries. Bake at 170°C (top and bottom heat) for about 70 minutes. Allow the cake to cool and after at least 2 hours of cooling (or refrigeration) remove from the pan. Spread the cherries over the quark and prepare the glaze according to the package instructions and drizzle over it. Then chill for a while and serve well chilled.
